Shake well and strain into highball galss. Float dark rum, garnish with pineapple spear and lime peel. Serve with straw.

Pina Colada4.0 cl Irish Whiskey 8.0 cl Hot coffee 3.0 cl Fresh cream 1 tea spoon of brown sugar Pour into the glass (for hot drink) hot coffee, Irish whiskey, and add a teaspoon of sugar. Warm the mixture over a burner. Do not boil the mixture. Float Cream on top. Suggested to use a coffee spoon, place near the surface of glass and pour the cream gently over to enable it to float.

4.5 cl Tequila 9.0 cl Orange juice 1.5 cl Grenadine syrup Pour tequila and orange juice directly into highball with ice cubes. Add a splash of Grenadine syrup to create chromatic effect (sunrise), do not stir. Garnish with orange slice and cherry, straw and stirrer.

SPECIAL COCKTAIL Ladyboy
Ladyboy Long drink (Short Tumbler)
3.5 cl Baileys Irish Cream 3.5 cl Brandy Build ingredient into a short tumbler glass with ice, Stir lightly. Garnish with a cinnamon stick and sprinkle with grated nutmeg. This cockail was created by a newspaper photographer, Phil Coburn who works for the London-based Sunday Mirror. One night in 2003, Phil and some colleagues were stationed in Amman, Jordan, while trying to get into Iraq to cover the war. To alleviate the boredom, Phil invented a dreadful cocktail which he named a Ladyboy. Phil convinced the barman at The Intercontinental, Amman, that it was a real cocktail and he and his colleagues have had fun talking about it ever since. In the 2nd week of Jan 2010 in Afghanistan, Phil and his reporter, Rupert Hamer, were blown up with some selfless US servicemen and a brave Afghan in a roadside bomb. Rupert was killed, as were two of the US servicemen and the Afghani. Phil has lost both legs below the knee but, thank God, he survived. He is in good spirits, feels lucky to be alive and is going to be a father soon. Cheers to Ladyboy!
